This makes a great topping. It’s fast, no-bake, low-sugar, and tastes great.

You can turn it into jam with one additional step.

Ingredients

  • 1 cup strawberries
  • 1 cup blackberries or blueberries
  • 1 cup raspberries
  • 3 Tbsp chia seeds
  • ½ cup water
  • 3 Tbsp sweetener ( cactus honey powder, etc.)

Preparation

Stem strawberries. Wash all berries gently and drain.

Slice or dice the larger berries. You can also mash some of them.

Place in a bowl. Add chia seeds, water, and sweetener. Mix well, cover, and refrigerate for about one hour before serving.

Note: If you want to make jam instead of compote, place half the berries in a blender and blend until smooth. Coarsely mash the remaining berries. Mix together and continue with preparation guidelines.

Serving

Compote makes an excellent topping for toast, waffles. or pancakes, and whatever else you can think of.

Note:  Left-over jam freezes well. Just remove from the freezer a couple of hours before wanting to use it.
