Taylor's Fruit Topping
Although I like to slice fresh fruit over waffles and French toast, it’s also nice to have a hot fruit topping sometimes—especially on cold mornings.
- 1 cup coconut water
- 3 tbsp cornstarch (mixed with ¼ cup water or juice)
- 2 cups mixed berries or other fruit such as sliced peaches
- 2 tbsp honey or maple syrup
Place berries, coconut water, and sweetening in sauce pan and bring to a boil.
Gradually pour in cornstarch and water/juice mixture, stirring constantly.
Cook over low heat until thickened.
Use as a topping.
