I like hummus and I especially enjoy edamame hummus. It’s smooth and delicious. I like to use home-baked pita chips (see below.)

Ingredients

  • ½ can canned white beans, drained (15-oz can)
  • ½ can garbanzos, drained (15-oz can)
  • ½ cup frozen edamame beans, thawed
  • ¼ cup lemon juice
  • 3 Tbsp dried parsley
  • ½ cup water
  • 1 Tbsp olive oil
  • 1 Tbsp pine nuts
  • T tsp garlic (I use Spice World ready-to-use garlic)
  • ½ tsp sea salt
  • ½ tsp turmeric
  • ¼ tsp cumin

Preparation

Place all ingredients in a blender or food processor and puree.

Cool in refrigerator.

Serving

Serve with chips or flatbread or baked pita bread.

NOTE:  To make your own home-baked pita chips, cut a package of pita bread into eighths, place triangles on a screen, and bake in an oven preheated to 425 degrees for 10 to 15 minutes until brown and crispy. By using a screen you avoid having to turn the chips over as you would if they were on a cookie sheet.
