Blueberries are my favorite berry and head a list of berries as being high in antioxidants. No surprise, blueberry sauce is my favorite on waffles, pancakes, French toast, or rice pudding. It is fast, easy, and delicious—in my brain’s opinion, of course. You can also make it with mashed strawberries, raspberries, or lingonberries.

Ingredients

  • 10-12 ounces fresh or frozen blueberries
  • 1 cup applesauce
  • ½ cup of water or any type of mild-flavor fruit juice including Aloe vera berry juice
  • 1-2 Tbsp cornstarch, depending on desired consistency

Preparation

Combine blueberries and applesauce in a quart-sized pan. Cook over medium heat until starting to boil.

Sprinkle cornstarch in the juice in a measuring cup or other small container and stir until smooth. Pour mixture into the hot blueberries and applesauce mixture, stirring continually until it thickens.

Reduce heat to low, cover the pan, and let mixture sit until ready to serve.

Serving

Pour sauce into a serving dish. Spoon out over waffles, pancakes, French toast, or rice pudding.
