Taylor's Surprise Gazpacho
While visiting my friend Marc in Rome, he prepared a version of this marvelous cold Gazpacho. This cold soup requires no cooking so it can be made and served rather quickly. I was 'surprised' I liked it so much! The perfect choice for a warm evening out on the terrace, it needs just an hour or two of chilling in the refrigerator.
Ingredients
- 1½ pounds ripe Roma tomatoes
- 1 red bell pepper, seeds removed
- 1 small cucumber
- ½ cup non-dairy milk (almond, almond-coconut)
- 2 cloves garlic
- 1 tsp chicken-style seasoning or Bill’s Best or equivalent
- 1 tsp virgin olive oil
- ½ tsp Himalayan salt
- ¼ tsp pepper
- Few chopped leaves of basal or parsley for garnish, if desired.
- 1-2 Tbsp water, as needed for consistency.
Preparation
Place all ingredients in a blender and blend until very smooth. May add 1-2 Tbsp water, as needed for consistency.
Place in a bowl. Cover tightly and refrigerate until chilled.
Serve
Stir cold soup. Ladle into soup bowls.
Serve with baked crackers.
