Taylor's Raspberry Dressing
After new research was released linking the acetate in all vinegars to Alzheimer's Disease, I took another look at Balsamic vinegar and decided I needed a salad dessing that was acetate-free. This recipe can be made with raspberries or strawberries. I haven't tried it with blue berries yet, but that'll be next. It an also be made without oil.
Ingredients
- 1 cup sraspberries (fresh or frozen)
- 1 tsp lemon zest from the skin of one large Myers lemon
- 1/4 cup of fresh lemon juice
- 1/4 cup Aloe Vera juice (add more or less to desired consistency)
- 2-3 Tbsp honey or maple syrup (to taste)
- 1 small shallot
- 1 tsp Dijon mustard
- 1/4 cup avocado oil or extra virgin olive oil,if desired.
- 1/4 tsp sea salt or1/2 tsp NoSaltTM
Preparation
Put all ingredients in a blender and blend until very smooth.
Place dressing in an air-tight container and refrigerate until cold.
Serving
Goes well with almost any type of mixed green salad. I often add a can
of garbanzos or black beans, washed and drained, to the salad.
