While hanging out with my friend Flo recently, I tasted her dessert truffles. Okay, I tasted more than one! They are a healthier dessert for special occasions. Two or three in a small dish make a serving.


  • ½ cup raw nuts
  • 2 Tbsp chia seeds
  • 12 Medjool pitted dates
  • 6 Tbsp boiling hot water
  • ½ tsp real vanilla
  • 5 Tbsp unsweetened cocoa


Place dates and hot water in a food processor until a paste form and sticks on the blade.

Add nuts, chia seeds, and 4 Tbsp cocoa. Pulse until a solid dough forms.

Use a melon ball scoop to form dough into ½-in size balls.

Place balls on a large plate or baking sheet and chill in refrigerator for 30-60 minutes until set.

Pour remaining cocoa in a shallow dish and roll the balls in the cocoa until lightly coated.


May serve right away or refrigerate in an airtight container.
