Taylor's Carob Chip Cookies
Many people grew up eating home-made cookies only to find that the typical chocolate chip cookie is filled with fat, sugar, and white flour—a type of food that is not recommended in a Longevity Lifestyle. Using carob (instead of chocolate) and dates and raisins (instead of sugar) and using no fat at all, makes for a much healthier cookie that is quite tasty.
Ingredients
- 1 cup water
- 1 cup raw nuts (your choice)
- 2 tsp vanilla
- ½ cup raw sunflower seeds
- ½ cup chopped dates
- ½ cup carob chips
- 1 cup raisins
- 2 Tbsp chia seeds
- 1 tsp ground cinnamon
- ½ tsp salt
- ¾ cup oat flour (blend old-fashioned oats)
- ½ cup non-wheat whole grain flour
Preparation
Blend water, nuts, and vanilla in a blender. Pour into a mixing bowl.
Add all other ingredients and stir until moistened.
Place parchment paper on a cookie sheet.
Place a spoonful of batter on parchment paper the size of cookies you want.
Place cookie sheet in over preheated to 350 degrees F. and bake 15-20 minutes until desired consistency. If you like cookies that are lightly browned but soft, check after 15 minutes. If you like cookies that are crisper and chewier, bake an additional 5 minutes and then check on them.
Serving
Serve warm or cold.
