While visiting my friend Marc in Rome, he prepared a version of this marvelous cold Gazpacho. This cold soup requires no cooking so it can be made and served rather quickly.  I was 'surprised' I liked it so much! The perfect choice for a warm evening out on the terrace, it needs just an hour or two of chilling in the refrigerator.

Ingredients

  • 1½ pounds ripe Roma tomatoes
  • 1 red bell pepper, seeds removed
  • 1 small cucumber
  • ½ cup non-dairy milk (almond, almond-coconut)
  • 2 cloves garlic
  • 1 tsp  chicken-style seasoning or Bill’s Best or equivalent
  • 1 tsp virgin olive oil
  • ½ tsp Himalayan salt
  • ¼ tsp pepper
  • Few chopped leaves of basal or parsley for garnish, if desired.
  • 1-2 Tbsp water, as needed for consistency.

Preparation

Place all ingredients in a blender and blend until very smooth. May add 1-2 Tbsp water, as needed for consistency.

Place in a bowl. Cover tightly and refrigerate until chilled.

Serve

Stir cold soup. Ladle into soup bowls.

Serve with baked crackers.
