Taylor's Quinoa Granola
I really enjoy homemade granola. My friend Flo makes one without any oil that is really delicious. Because I wanted to use quinoa flakes, I did some experimenting and finally settled on this recipe. You can serve it with almond or other non-dairy milk or just crunch on it dry. That’s my favorite!
- 3 cups old-fashioned rolled oats
- 1 cup quinoa flakes
- 1 cup finely shredded coconut
- 1 cup chopped raw nuts (your choice)
- 1 cup dried blueberries or cherries
- ½ cup maple syrup
- ½ tsp Himalayan salt
- ½ tsp ground cinnamon
- 2 tbsp chia seeds
- 6 tbsp water
Preheat oven to 300 degrees F.
Place all ingredients (except chia seeds, water, and maple syrup) in a mixing bowl. Mix well.
Dribble maple syrup over ingredients and toss to coat evenly.
Mix chia seeds and water in a small bowl and mix with a whisk until frothy. Add to mixing bowl and stir well.
Line two large cookie sheets with parchment. Divide granola mix into two parts and spread each on one of the cookie sheets.
Place in the oven and bake for 55-60 minutes.
Remove from oven. Allow to cool. Store in a covered container.
Place ½ cup in a bowl and serve with non-dairy milk. Some enjoy its crunchy chewiness just plain, without adding non-dairy milk.
