These vegetarian alternatives to typical “burgers” are very tasty and nutritious, as well.
If you've ever read Masson's book "The Face on Your Plate - The Truth About Food" you may be even more excited about these. They're one way I can do my "green" bit for the planet, and my body.
Ingredients:
- ½ sunflower seeds chopped or ground (can toast on a baking sheet at 350 º for 5-7 minutes until golden and then grind or chop when cool)
- 2 cups of canned garbanzo beans, drained and mashed
- 3 cups cooked brown rice
- 1 medium onion finely chopped
- 1 medium carrot grated
- ½ cup Italian-style breadcrumbs

- ½ cup finely chopped nuts of choice
- ½ cup chopped fresh parley
- Egg whites or egg beaters (equivalent of 8-10 eggs)
- ¼ cup soy sauce
- 1 tsp dried thyme
8 burger buns or 8 slices of French bread, toasted
Condiments as desired (e.g., lettuce, tomato, hummus, mayonnaise)
Combine all ingredients in a bowl and mix well.
Form into 8 patties (to fit slices of bread or burger buns).
Place in hot skillet sprayed with vegetable oil.
Cook slowly over medium heat until browned on one side.
Turn and repeat for other side.
Serve on burger buns or toasted French bread with condiments as desired.
Note: They freeze well. You can thaw and roast them on an outdoor barbeque grill or heat in a regular oven until hot.
