This was a childhood favorite. My brother, Allan, especially liked it. He would have been able to single-handedly demolish an entire casserole--if he'd been allowed to do so. Made with cereal it’s fast, easy, and delicious.
Ingredients:
- 1 18-ounce box of Special “K” cereal
- 2 onions, chopped
- 2 cups egg beaters or egg whites
- 4 cups small curd cottage cheese (1% or 2% if available)
- 1 can black beans, drained
- 4 cubes of vegetarian broth dissolved in 1 cup rice milk
- Salt and pepper to taste
- 2 Tbsp parsley flakes
May add one or more additional ingredients if desired, such as mushrooms, cashews, artichoke hearts, olives, green peas, white whole-kernal corn, etc.
Combine ingredients in a large mixing bowl. Stir until well mixed.
Pour into a 9-12 casserole dish. Pack down smoothly.
Bake at 325 º F for 45-60 minutes.
Cut in squares and serve.
Freezes well. Thaw, cover, and reheat in the microwave or cover and reheat at 325 degrees F for 30 minutes in a conventional oven.
