Taylor's Special "K" Casserole Print E-mail

 

Made with breakfast cereal, this casserole was probably my brother’s all-time favorite. He could easily have eaten the whole thing had he been permitted to do so! This recipe is fast, easy, and delicious. It makes a great addition to potlucks . . . you’ll bring home a very empty baking dish!

Ingredients:

  • 1 18-ounce box of Special “K” cereal
  • 2 onions, chopped
  • 2 cups egg beaters or egg whites
  • 4 cups non-fat cottage cheese
  • 1 can black beans, rinsed and drained
  • 4 cubes of vegetarian broth dissolved in 1 cup rice milk
  • Salt and pepper to taste
  • 2 Tbsp parsley flakes

 

May add one or more additional ingredients if desired, such as mushrooms, cashews, artichoke hearts, olives, green peas, or white whole-kernal corn. This may alter the overall taste slightly.

 

Preparation:

  • Combine ingredients in a large mixing bowl. Stir until well mixed.
  • Pour into a 9-12 casserole dish. Pack down smoothly.
  • Pre-heat oven to 325 º F. Bake for 45-60 minutes.
  • Cut in squares and serve.

Freezes well. Thaw, cover, and reheat in the microwave or cover and reheat at 325 degrees F for 30 minutes in a conventional oven.
