Taylor's Two-Potato Pancakes |

Combining sweet potatoes with white potatoes serves to reduce some of the high-glycemic impact of white potatoes alone.
Ingredients:
- 1 cup cooked white potatoes mashed
- 1 cup cooked sweet potatoes mashed (I like to bake them)
- 3 tbsp self-rising flour
- ½ cup rice milk
- ¼ cup finely minced onion
- ¼ tsp salt
- Dash of black pepper, if desired
- Dash of ground nutmeg
- ½ cup egg whites or egg beaters (equivalent of 4 eggs)
Place all ingredients in a bowl and blend thorough.
Drop batter by tablespoonfuls into hot skillet. Flatten into thin pancake shape.
Cook until bottoms of pancakes are browned.
Turn and cook until other side is browned.
Repeat until all batter has been used.
Place on serving plate and serve with applesauce (and light sour cream if desired).
