I come by liking "bread" dishes honestly. No doubt it has something to do with my French-Irish ancestry. As I became more health conscious, my French Toast recipe used rice or almond milk and egg-whites to lower the cholesterol content.
When I developed a sensitivity to eggs--the resulting hives have nothing to do with bees!--my French Toast recipe became dairy-free. It's amazing how quickly one's taste buds adapt. I've included the dairy-free option at the bottom, as well. I hope you enjoy either variation.
The following recipe is for one person, so just multiply it by the number of persons who want French Toast!
Ingredients
- 1/4 cup rice milk or almond milk
- 1 Tbsp egg-whites (or egg substitute)
- 1/4 tsp real vanilla
- 2 large slices of white or cracked wheat sourdough bread (I only use sourdough that contains natural yeast starter only)
Preparation
Mix the first three ingredients together in a large flat dish. Place the two slices of bread in the dish and soak until all liquid is soaked up.
Spray large frying pan with olive oil and place over medium heat.
Carefully place soaked bread slices in the frying pan. Cover with a lid and let cook 5-7 minutes. Carefully turn slices over and cook until brown on both sides.
Note: You can place cooked slices in the oven at 250º F. to keep warm while the other pieces are cooking if you are serving more than one person (or if you're really hungry!).
Serve with fresh mixed berries or diced fruit, chopped nuts, and real maple syrup.
Dairy-Free Option
Use the following ingredients and then cook per instructions above. Remember to multiply ingredients by the number of persons who plan to eat French Toast (or who want a double serving). Enjoy!

- 2 large slices of white or cracked wheat sourdough bread (Again, I only use sourdough as it contains natural yeast starter only and may not trigger as high a glucose spike as do most breads)
