My little French grandmother made the best split-pea soup imaginable! I've never tasted anything else quite like it. Although she never wrote anything down, I watched her prepare it many times and finally wrote it down myself. Its taste and aroma remind me of her.

Ingredients:

  • 8 cups of water
  • 1 ½ cups dried split peas (rinsed and drained)
  • 1 large white onion sliced finely
  • 1 large carrot sliced finely
  • ¼ cup barley
  • ¼ cup brown rice
  • 2 Tbsp McKays mock chicken seasoning
  • 1 tsp salt
  • ¼ tsp black pepper, if desired
  • ½ tsp basil flakes
  • ½ tsp garlic

Bring all to a rolling boil.
Simmer slowly until very soft, stirring frequently (takes several hours).

Add water as needed to desired consistency. You can put through the blender or leave as is.

Serve with French bread.
