This is an absolute life-saver when company drops by unexpectedly and stays to dinner. Just keep some packages of Top Ramen Noodles (or the equivalent) in your cupboard and a package or two of frozen stir-fry vegetables in your freezer—and you’ll be in business.
This recipe feeds one person. Just multiply by the number of people. I throw away the seasoning packet that comes in with the Top Ramen Noodles to avoid the seasonings that may act as neurotoxins.
Pour ½ cup of water and 1 cup of rice milk into a sauce pan.
Heat to the boiling point.
Add 2 rounded tsp McKays mock-chicken seasoning or veggie bouillon cube.
Add one package of Top Ramen noodles and turn heat down to simmer.
Ingredients:
- ½ cup chopped onion
- ½ tsp garlic
- Dash of pepper, if desired
Place a small frying pan over medium heat. When you splash a drop of water in the pan, the water should sizzle and evaporate.
Spray frying pan with olive oil. Sauté onion with garlic and pepper until onions are caramelized.
Add 1 cup frozen stir-fry vegetables.
You may also add some braised tofu, diced gluten, or mock chicken pieces.
Heat until vegetables are al dente.
Pour mixture from frying pan into the noodles.
You can vary the taste by adding ¼ tsp curry powder, or ¼ tsp cumin, or 1 tsp Italian herbs, or 1 tsp dried parsley flakes.
Simmer to taste and serve in soup bowls or mugs.
