Mac 'N Cheese is a comfort food for me. I tend to lean toward low-fat forms that can be prepared quickly. A favorite combination is to cook a nice big California Artichoke to eat with the Mac 'N Cheese.
Two boxes of White Cheddar Cheese Macaroni & Cheese Dinner
Bring 2 quarts of water to a boil in a large soup kettle.
Add macaroni from two boxes of White Cheddar Cheese Macaroni & Cheese Dinner.
Cook until tender and drain in a colander.
Ingredients:
- 2 cups rice milk
- 2 cups low-fat cottage cheese
- Salt and pepper to taste
- 1 tsp McKay's mock chicken seasoning
- Sauce mix from 2 boxes of macaroni
- 1 small onion chopped finely and sautéed until clear
Combine remaining ingredients in large soup kettle. Mix well and heat through.
Add drained pasta and stir. Cook over low heat to allow macaroni to soak up liquid.
Serve immediately with toasted Focaccia bread and celery sticks or cooked artichokes.
You can reheat individual portions in the microwave—if there are any leftovers!
