Taylor's Breakfast Casserole |

My friend Barbara made this one Sunday morning while I was visiting in North Carolina. It tasted very good and is a great way to use leftover broccoli or cauliflower. Or you can even use frozen mixed vegetables that have been thawed. Enjoy!
Ingredients:
- 1 cup egg beaters or egg whites
- 1 cup Bisquick or gluten-free baking mix
- 2 cups non-fat cottage cheese
- 1 cup liquid (e.g., rice milk, soy milk, almond milk)
- 1 large red or white onion, diced
- 2 cups veggies
- ½ cup cashews
- 1 can sliced water chestnuts, rinsed and drained (if desired)
Preparation:
Preheat overn to 350 degrees F.
Combine all ingredients in large bowl and mix well.
Pour into a square or oblong greased casserole dish.
Bake in pre-heated oven at 350 degrees F. for 60 minutes, or a bit longer until brown on top.
Cut into squares and serve.
Goes well with cut fresh fruit....
